Happy Easter Birthday!!


Emma was the only one young enough to participate in the town Easter Egg Hunt. It was way too crowded, so I think we'll stick to the Family Egg Hunt at home from now on.

Logan had his last Pinewood Derby this past week. He also earned his Webelo's badge that night. He has blue fingers because he decided to smash his fingers into a wall at school. Thankfully nothing broke.
We were actually all home and able to color eggs together.












Today Megan turned 13. She had a bunny birthday cake since this is the only time she will ever share her Birthday with Easter. She was even lucky enough to get to be the Youth Speaker today as well.


O.k. Terri, Here is the recipe I talked to you about. It's a good way to use up leftover ham.
Scalloped Ham and Cabbage
2 cups cubed fully cooked ham
1/2 cup uncooked long grain rice
1/4 cup chopped onion
1/4 cup butter
1 1/2 cups milk
1 can cream of mushroom soup
1 teaspoon prepared horseradish
1/2 teaspoon salt
3 to 4 cups chopped cabbage
In a large skillet, saute the ham, rice and onion in butter until rice is golden brown and onion is tender. Stir in the milk, soup, horseradish and salt. Add cabbage; cover and cook over low heat for 35 - 45 minutes or until the cabbage is tender, stirring occasionally.
I usually double this.
